It would be pretty stupid to have your 10% be all from the same department. So you should randomly pick 10% of the executives, 10% of middle-management, and 10% of the custodians. This will give you 10% of the total number of employees (800).

I’d go for a stratified sample
Split the workforce into the separate groups and random sample each, with the total number chosen being 10% the size of the respective group
This would provide a proportionally representative sample
